Harambe Market: Vegetable Rice Bowl

After returning to Africa from our journey to Rafiki’s Planet Watch, we were ready for some sustenance to keep us going on our journey through Disney’s Animal Kingdom.  We decided to stop at Harambe Market (which was conveniently located to the train station) to try the plant-based vegetable rice bowl. The vegetable rice bowl comes with zucchini, sweet potatoes, chickpeas cauliflower, pico de gallo, side salad, and rice. It was filling and easy to share, but I thought the vegetables were a little overcooked and lacking flavor. This dish replaced a roasted vegetable item that I absolutely loved. The previous item here was full of flavor from the spices used in roasting the predominantly root vegetables.  The upside to this new item is that it is plant-based as is, where the previous bowl needed to be customized.
