The Coral Reef Restaurant in EPCOT’s Future World recently added some new plant-based options to their menu. While I was disappointed to see the tempura cauliflower go, I’m always excited to try new options. These options include a Mushroom (Lobster-style) Salad and a Grilled Garden Vegetable Skewer. I’ve never had any interest in eating anything resembling a lobster. So, I decided to skip the salad and dig right into the entree. The vegetable skewer came with zucchini, onions, peppers, tomatoes, asparagus, basmati rice with lentils, kefta and a smoked eggplant salad. I enjoyed the entree’s variety and I always appreciate a cornucopia-like amount of veggies.
Overall, I thought the vegetable skewer was tasty and worth the price. The vegetables weren’t overcooked and the rice and lentils made a filling option. I only wish that they were less shy with the spices. The vegetable skewer and its accompaniments had flavor, but it felt like an ingredient missing from the dish, but I’m not sure what to add. Maybe a Middle Eastern spice blend would have livened up the dish. I would love to see a dish like this being served over in the Morocco pavilion’s Restaurant Marrakesh; where their vegetables are overcooked and bland.
