If you happen to be over at the Land Pavilion in Epcot and want a tasty vegan treat, I highly recommended stopping by Sunshine Seasons to try their new vegan coconut pineapple cupcake. It’s delicious! Even non-vegans should try this one. The coconut cake is nice and dense and the coconut flavor isn’t too overpowering. The center contains a tangy pineapple preserve, which pairs nicely with the cake. It’s topped with a GENEROUS amount of frosting. Yay!!! Finally, the cupcake is completed with a little bit of Disney pixie dust with Mickey shaped sprinkles and a cherry on top.
