Taste of EPCOT Festival of the Arts: Beet Tartare

One of the food items at this year’s Taste of Epcot International Festival of the Arts that sparked my curiosity is the plant-based is the Salt-roasted Beet Tartare. The presentation and concept are unique. This dish is served with pickled vegetables and a parsley salad. It’s hard to call the Salt-roasted Beet Tartare a “must try” item of the festival. It wasn’t bad. I enjoy pickled vegetables, parsley, and roasted beets. However, the flavor combination tasted like an incomplete thought. The parts were fine separately, but something was missing that would have unified the parts. I think this is an item that I will forget that I ate in a couple of months from now. I would like to see a revised version of this dish at another festival. It has potential but still needs to find that missing ingredient.
