In the Lazy Disney Kitchen posts, I try to recreate Disney recipes and magic at home using as many shortcuts and as few dishes as possible.
For my first recipe, I decided to go with one of the easiest Disney World items that I could think of making…the Columbia Harbour House Lighthouse Sandwich. In my initial review, I wrote about the comforting quality this sandwich had while taking a break from the heat and the crowds. I can’t think of a better sandwich to make at home, especially while Columbia Harbour House remains closed. This dish is relatively quick to make and requires only a few ingredients. That’s great for those of us who do not have a lot of time to spend in the kitchen.
Ingredients
1 Package Broccoli Slaw
¾ Cups Dijon Dressing
1 Container of Store Bought Hummus (you can totally make your own if you have more time)
4 Slices Multigrain Bread
1 Tomato

- Mix the package of slaw in a bowl with the dijon dressing
- Slice the tomato
- Toast the bread
- Spread hummus on each slice of the bread
- Add a generous spoonful of the slaw
- Add tomato
- Cut the sandwich in half
- Enjoy!
