Plant-based Lighthouse Sandwich

The Lighthouse Sandwich at the Columbia Harbour House in the Magic Kingdom has always been a vegetarian option, but they recently converted this staple to a vegan choice. Mayo has always been a gag-inducing condiment for me, so I’ve usually skipped this sandwich in favor of the chili. Since the mayo has been replaced with a plant-based option, I decided to give it a try. This sandwich comes with broccoli slaw, hummus, on multigrain bread and served with house-made chips. I have to say that the Lighthouse Sandwich made me feel a little nostalgic. Biting into it was like biting into a memory of a boxed lunch while out on a school field trip. This isn’t the most exciting option and probably not one that I would order often, but I like that it was something comforting and familiar. The Lighthouse Sandwich is a great option for someone who is looking for that familiarity.
